So let's start out with ideas that you are planning to do for Halloween. Any baked goodies that you would like to share? Since we really don't do the trick or treating thing, I may bake up some Halloween cookies for the kids. I also may think to do a Kitty Litter cake that I saw a week or so ago. It's interesting looking and probably would be interesting to make.

Share your favorites of what you like to make or what others have made that you enjoyed eating.

What's New in Your Kitchen?

What's in your kitchen? Or better yet, what do you want new in your kitchen? For me personally, I could do some online window shopping for kitchen stuff for the majority of the day if I had the time. For instance new pots, pans and some bakeware is what I would be looking for right now.

Since the summer days have been way hotter than usual, I've been keeping cool indoors and just cruised around online to admire some new kitchen items. I did come across one website I liked called K & Co shop and they have a few homeware items that I were nice and a few that I never seen before. They had a lot of colorful kitchen items and that's the direction I want to go in is adding color to my kitchen without having to paint. Here are a few that I liked so far while just glancing through:

The color orange is nice and plus I like the grill marks in the frying pan. I never had a cast iron pan before, but I heard they are good to cook with. This is the JML Country Cookware set.

I don't know why I would buy this since I don't make casseroles, but I thought the dish looked cool, plus it's in my favorite color. This is Prestige This Morning Casserole Dish.

I know my kids would love for me to make big ole cupcakes, so the JML Big Top Cupcake would be fun to bake with.

And I thought this frying pan was pretty cute. It's from Jamie Oliver and if you're not able to read what it says, on the bottom of the pan it says "I'm Cooking, You're Washing Up". Haha, love it!

Ok, your turn. Since I had a box of brownies that had been stashed in the cabinet for a while and I had bought a new baking pan, not too long ago and thought I would try this again. Well after making sure the ingredients were mixed well, poured into the pan and left it baking at the correct time and temperature, the brownies came out moist and not gooey, gooey like they were before. I was tempted in getting that Perfect Brownie product that I seen some time ago to try it out so that the brownies would be at least in equal sizes. I can't go equally for the world.

Now I used a store brand kind of brownies and I added an extra egg to make them cake like, so I'm not sure if the brand and the extra egg made a difference or what. Maybe I will try and see how it will turn out with another brownie mix. A picture is included, I kept them in the pan as they I have a cover to put over it to keep them moist. And yes, that is half the pan already gone. Shows proof that it came out really well =)

Spiderman Cake

This is my Spiderman cake that I made for my son's 4th birthday since it is his favorite character at the moment. No? Well you can read about it at my A Little Brownie Help Please post. Well, I did get in touch with a Baking Guru that was recommended to me by a commenter who recommended some tips that I could do. The next time I make brownies, I will have to come back and do a few of these tips. I don't make brownies very often because how they turn out, but if these tips work, the I'll make brownies regularly as I do cakes.

Here are the tips listed below:

If you are using dark metal pans, please know that they are absorbing more heat and brown more than other baking pans.

Brownies are done when the bars begin pulling away from the sides and when a toothpick inserted in the center comes out still sticky.

You might be overcooking.

Your oven might not be heating evenly.

The best pans for baking are light colored and shiny.

New Blog Look

So I have changed the way my blog looks and I really like it. I found a free template from a wonderful lady that does her own blogging templates. I think the new looks is a little better and has a more baking feel to it and it was light and airy.. lol.

I've been really missing in action for a good while now, but hopefully will be back soon. Just have been busy with my classes and home life and haven't been able to do much cooking. Well, I did do a recipe for strawberry cake I think it was. It was a white cake, topped with strawberries and covered with whipped cream topping. I made it for my sister in law and she really enjoyed it. That was my first time making it. I will have to find the recipe and post it for those that may be interested.

Cake For a Baby Shower

I'm thinking about doing a cake for my sister in law since she is due this November with another boy. I haven't made a cake like this before so this should be interesting and fun. Although I think i will probably do a few practice run before that time. I do have an idea of doing a cake that looks like two or three personalized baby gifts, kind of like wrapped gift boxes on top of one another, but I know that will really be a challenge for a noob like me. I guess I better look around online and such and see what I can come up with. I never did something like this for her with her other two and wanted to something special for her at least once and try to do a baby shower for her. Hopefully it will be good turn out.

How To Cook Real Food: An Online Cooking Class

A Little Brownie Help Please

So I need some advice from a brownie guru/expert about baking brownies. For some reason whenever I make them, the center seems to never bake. The out edges are baked through, but if I try to keep it in the oven longer then need be, the center is still gooey and the edges are hard as bricks. Anyone out there that could possibly tell me what may I be doing wrong. I don't remember having this problem at all before, but now it it's just a mess for me.

I'm thinking that maybe I should just follow the directions next time to make cake like brownies and see if they may solve my problem. It's a pretty simple recipe with only about 3-4 ingredients. I did had to adjust my baking time to about 20 minutes because the cookies were not completely done. This could be because the amount I had scooped to make the cookie balls, so adjust yours accordingly if need be. I had a box of red velvet cake mix in the cabinet and used that. Been missing for some months now and sorry about that, just haven't been able to do some baking like I would like. Hopefully I will get to do somethings soon, especially for my son's birthday that is coming up in less than a week. He will be two, I'm happy and sad at the same time. Hoping to find something to bake even if it's a small cake for him or make some cupcakes to decorate. Anyway, during the summer I want to try some new things out of the Kraft Foods magazine that I received in the mail a few days ago. They have some yummy desserts and other things such as the frosty orange creme dessert or the keylime cheesecake or the peanut butter and fudge swirl pie. I'm already wanting to try these out already Can't wait to get back into the kitchen and bake again.

Baking Treats for Gifts

This year, instead of buying gifts for friends and family, I'm planning on baking goodies for them like cookies and small cakes or something else, not quite sure yet. I have been looking about at the gift in a jar recipes in which I think would be nice to give out. I've seen a few where you can make cake mix in a jar to something simple as tea or hot chocolate mix. Anyone else planning to make food as a Christmas gift this year?

I've added a new blogger to my foodie blog roll if you would like to take a look at it. Divide dough into 6 portions. On an ungreased cookie sheet, pat each portion into a 5-inch square. Press a well-floured 3- to 4-inch Halloween cookie cutter into the square (use smaller cutters, if desired). Carefully remove cookie cutter without removing dough. Using a table knife, cut outside portion of square into large puzzle pieces.

2. In a small mixing bowl beat egg yolks and water. Divide mixture among 3 or 4 small bowls. In each bowl, add 2 to 3 drops of liquid food coloring or desired amount of paste food coloring in desired color; mix well.

3. Brush dough puzzle pieces with different colors of egg yolk mixture. Apply to cookie dough with small clean paintbrush. If mixture thickens while standing, stir in water, one drop at a time.

4. Bake in a 350 degree F oven for 7 to 8 minutes or until bottoms of cookies just start to brown and centers are set. While still warm, carefully recut pieces with cookie cutter and knife. Trim edges as needed. Transfer cookies to a wire rack; cool completely. At launch, the Foodbuzz community ranks as one of the top-10 Internet destinations for food and dining (Quantcast), with bloggers based in 45 countries and 863 cities serving up daily food content.

“Food bloggers are at the forefront of reality publishing and the dramatic growth of new media has redefined how food enthusiasts access tasty content,” said Doug Collister, Executive Vice President of Foodbuzz, Inc. “Food bloggers are the new breed of local food experts and at any minute of the day, Foodbuzz is there to help capture the immediacy of their hands-on experiences, be it a memorable restaurant meal, a trip to the farmers market, or a special home-cooked meal.”

Foodbuzz is the only online community with content created exclusively by food bloggers and rated by foodies. The site offers more than 20,000 pieces of new food and dining content weekly, including recipes, photos, blog posts, videos and restaurant reviews. Members decide the “tastiness” of each piece of content by voting and “buzz” the most popular posts to the top of the daily menu of submissions. Foodbuzz currently logs over 13 million monthly page views and over three million monthly unique visitors.

“Our goal is to be the number-one online source of quality food and dining content by promoting the talent, enthusiasm and knowledge of food bloggers around the globe,” said Ben Dehan, founder and CEO of Foodbuzz, Inc.

The Foodbuzz blogger community is growing at a rate of 40 percent per month driven by strong growth in existing partner blogs and the addition of over 100 new blogs per month. “The Foodbuzz.com Web site is like the stock of a great soup. The Web site provides the base or backbone for bloggers to interact as a community, contribute content, and have that content buzzed by their peers,” said Mr. Dehan.

Global Blogging Event

Demonstrating the talent and scope of the Foodbuzz community, 24 Meals, 24 Hours, 24 Blogs offered online food enthusiasts an international, virtual street festival of food and diversity. Fill a large hole or sugar shaker with flour and use that when needing to dust surfaces with flour or just pour out a tablespoon as you need it, this is handy way to keep a bit of flour on hand instead of digging in the flour bin.

2. Roll pastry on waxed paper. Before placing paper on work surface, wipe surface with a damp cloth to prevent slipping. Flour paper lightly, and with forefinger draw a circle an inch and a half larger than the pan you intend to use. You’ve seen pastry cloths with guidelines…and they really do help. When pastry has been rolled out, pick up paper pastry and all. Fit into pan, paper side up and then pull paper away from crust. Prevents tearing or stretching twist paper and pan. Another nice tip: You can also roll pastry between two sheets of waxed paper.

3. Keep brown sugar in a closed container with an apple in it, the brown sugar will stay soft and moist.

4. After crimping the edge of the pie crust, lift the edge of the crust gently all around with your fingers. This keeps the dough from sticking to the dish while baking and makes it easier to take out the pieces of pie.

5. Cookie & Cake Decoration: Keep a small amount of sugar in small glass jars, add a few drops of food coloring and shake jar. Keep several colors on hand. You can also use this technique on shredded coconut.

For more great tips check out 45 Cooking & Baking Tips

International Chocolate Day

And what best way of celebrating this day then with loads of chocolate..mmm. I think it turned out pretty good. It did have that flavor of honey bun a bit when you eat the part with the frosting on it. Below are a couple of pics. I used a bundt pan to bake the cake in, so because of that, it took about 65 to 70 minutes to bake in the oven.

I've Received An Award

I received a prestigious award today for this blog. Preheat oven to 325 degrees F (165 degrees C).

 2. In a large mixing bowl, combine cake mix, oil, eggs and sour cream. Stir by hand approximately 50 strokes, or until most large lumps are gone. Pour half of the batter into an ungreased 9x13 inch glass baking dish. Combine the brown sugar and cinnamon, and sprinkle over the batter in the cake pan. Spoon the other half of the batter into the cake pan, covering the brown sugar and cinnamon. Twirl the cake with a butter knife or icing knife until it looks like a honey bun (or whatever design you want to make).

 3. Bake in preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Frost cake while it is still fairly hot. Serve warm.

 4. To Make the frosting: In a small bowl, whisk together the confectioner's sugar, milk and vanilla until smooth.

Philly Brownie Cheesecake

If you are looking for a different way to put a bit of zing into ordinary brownies, here is a great recipe from Kraft Foods. It was especially useful for me when I wasn't sure if I had enough icing to frost my bundt cake or you could use this technique for a pound cake. You would use 1/2 cup of icing, any flavor that you are using, and put it into a small saucepan. Heat the icing up to where it will melt into a liquid that you are able to pour over your cake. Or you can just heat the icing in the microwave in its original container for 15 seconds. If the icing has been in the refrigerator, then continue 15 second intervals until it takes a liquid state.

Tech Tags: icing tips , icing, easy, cake

Baker's Beginnings

I love to bake. I feel as it is a therapeutic thing that once processed can turn into something delicious and satisfying. I got my love in baking from my grandma. She was a farmer's housewife and she would normally do everything from scratch if possible. I would sit at the table and watch her dice, mix, roll something tasty into the oven and she would usually include me in it. My favorite smells were the freshly baked biscuits or sweet potato pie that lingered throughout the day after the goodies have been eaten.

So I only bake things here and there when I often get the time to, but really want to do it more often. This will be a blog of baking recipes, baking tips and other baking ideas that I may come across or try out for myself. There may be some cooking recipes and other savory items that I find yummy may as well.

Tech Tags: baking, cooking, recipes, baking tips
